Duties & Responsibilities:
Ensures that each outlet is accounted for as individual profit centers.
Develops the annual operating budget for each outlet together with the Outlet Head concerned, which will form a part of the Business Plan.
Monitors all costs and implements control measures.
Ensures the quality standard of service.
Ensures that the Shangri-La FSMS program is strictly implemented.
Prepare, review food & beverage cost analysis and analyze monthly profit & loss statement.
Controls all F&B Purchase Orders as authorizing signatory.
Develops specific promotions and menus to enhance the quality and profitability of the F&B Division.
Establishes a yearly promotion and menu plan with follow-up meetings for each promotion and menu.
Regularly reviews guest feedback on quality of food and beverage (through guest comments, performance monitor, etc.)
Ensures that all F&B facilities and services yield maximum profitability for the Hotel, as well as maximum value for money for the guest.
Develops strategies to maximize information dissemination on service and facilities of F&B outlets.
Maintains good relationships with colleagues and contributes to team spirit.
Requirements:
Minimum 10 years of total work experience.
Atleast 3 years of experience of working in an international class hotel as Director of F&B.
Degree in Hotel Management.
Must be aware of the latest trends of new F&B concepts.
Must have strong sense of Business acumen
Must have a creative flair
Should posses good leadership skills.
Should be a motivator & a self-starter.
Should have good communication & interpersonal skills.
As the hotel will be shortly undergoing renovations of the existing F&B Outlets, the Director of F&B will be responsible for the complete coordination and must possess past experience of handling/launching the new F&B outlets.
Must ensure that the Shangri-La’s F&B outlets are recognized as strong brands of repute in the market.
